One of the most emblematic dish is certainly hummus which is actually not very difficult to do provided that you manage to gather the correct ingredients, probably the most difficult part: 2 cups of skinless 2 hours cooked chickpeas, 1 clove minced garlic, 1/2 cup tahini (a paste made from sesame seeds), salt, juice of 1 lemon, chickpea cooking liquid, extra virgin olive oil for finishing and SUMAC (a lemony spice from dried red berries).
The preparation is easier: puree the chickpeas and garlic; add the tahini, salt and lemon juice; then slowly add cold cooking liquid to get the consistency to your taste.
Serve hummus with a well in the center, drizzle with olive oil and sprinkle with sumac.
